I have a big folder of recipes, mostly given by friends. You know when you like a recipe and someone jots it down for you?
I just found a mystery recipe in the folder and I'm intrigued. It's a printed email but I cut off who it's from. No clue. It goes like this:
Coconut and Chocolate Truffle Cake with Pineapple
350g fresh pineapple
4 tbs dark rum
1 tsp vanilla extract
200g good dark chocolate
100g unsalted butter or vegan margarine
175g creamed coconut
200g ginger biscuits
"I can't find the instructions - I think you marinade the pineapple in the rum, melt the choc and add the rest (smash up the ginger bics) and place in a bread type tin in the fridge until set"
And that's it. A sort of fridge cake I suppose? Do you think I'm supposed to put the pineapple in it, or have it on the side? It wouldn't set with pineapple in it, would it?
I couldn't get cream of coconut but I got condensed coconut milk which is surely much the same?
