Summer Lamb roast meal ideas

Hi all,

We have friends coming for dinner on Friday night and I have it in my head I’d like to do lamb, but am at a loss as to how to do it for this nice weather. I’m sure one of you lovely lot will have something special for me up your sleeve!

Sami tamimi in his book Falestine does th e most incredible slow roast lamb. Serve with Turkish flat bread and 2 huge salads.

I have had success with this recipe before, it's a Cypriot style lamb from the book Taverna. I didn't use fresh dates, but if you read the pre-recipe description you can substitute them for a mix of medjool dates and apple.

Cook your lamb, I usually slow cook.

Cook new potatoes, cool and slice.

Add potatoes, peas fresh or frozen, shredded lamb and warm in large frying pan.

Add fresh pesto, diced feta and chopped diced fresh tomatoes.

Serve with flat breads and Parmesan.

Slow roasted minted lamb shoulder - cooked for 4+ hours depending on the size, it's amazing. Can serve with roast potatoes for colder days, or flatbreads and salad for warmer.
