Substantial duck salad

I have some duck breasts to use up and would like some recipes for a weather appropriate dinner-sized salad please. Or something like tacos would be good. Tia

Make some “croutons” by par-boiling some potato then frying or roasting them until crunchy. (Preferably in duck fat & rosemary.) Salad greens of your choice. Toasted walnuts and sliced pears. Something creamy like marinated goat’s feta or labneh. Thinly sliced red onion. Jar of sour (morello) cherries. Drain some of the cherries and put in the salad. Use some of the juice with some red wine vinegar, salt and pepper, a tiny bit of Dijon mustard and olive oil to make a dressing.
