Can a you tell me if you supposed to drain the tea after soaking the fruit? There seems to be a lot left.

Yes, you don't want the liquid, how long did you soak for? I often leave overnight with the fruit just covered. There's usually a bit to drain off.

I don't. I use the exact amount of tea, sugar etc specified in the recipe then add flour and eggs in the morning, without draining, and bake.

Thanks all. I did drain it (stupidly into the sink!) then realised I probably shouldn't have. It had soaked for eight hours. I remade some tea but only 150mls instead of 300 plus added the juice on the orange I had grated. Threw that in with the egg and flour. The loaf looks fine (albeit split on top) though I haven't cut it yet! Hopefully it will be better than my last attempt that I used plain flour for and it came out like a solid brick Blush

You need to leave it a day or so to slice or it may crumble. Must make some - love it!

Hope it turned out ok! I don't drain the tea off, but I might add a bit more flour if the mixture seems too sloppy. Love tea loaf. In fact, I'm sure I have all the ingredients ... !

The recipe I use doesn't drain and you need that liquid!

Bugger, just caught and realised I don't drain mine, having now checked my recipe, but think I got confused because there's never any liquid left to drain! Blush sorry. In recompense here's my hand me down recipe makes fab tea bread!

Tea Loaf
Tea Loaf, makes two 2lb loafs

Ingredients:
1.5 lbs dried fruit
0.5 lbs demerara sugar
¾ pint cold tea
2 eggs
1 lb self raising flour
3 tsp of mixed spice

Directions:
Mix fruit and sugar, soak overnight in tea
Add eggs, flour and spice, mix well.
Divide between 2 loaf tins (2lb size)
Cook at 325F, 160c, Gas Mark 3
Roughly for 1hr15 to 1hr30
May need to cover with greaseproof at end to stop top burning
Freezes well
