Something to go with lime and coriander rice

I have L&C river leftover from dinner tonight - it's nice and I thought I'd take it for lunch tomorrow. But we don't have much food in (delivery arriving tomorrow) and I can't work out what to have with it. Vegetarian. Turn it into some kind of rice salad? Other ideas?

Nothing good can come from a rice salad, it’s by far the saddest dish possible

id do it with Mexican something - chicken, burritos, fajitas, refried beans, tacos etc etc

I immediately thought of fish, but if you are vegetarian, I agree a Mexican flavour. With kidney beans, black beans or quinoa? Tomatoes, guacomole or just avocado slices and onions or spring onions.

Baked salmon, hot or cold. If you have a lime or lime juice, add to a little melted butter and drizzle it over when salmon is cooked. If you have any breadcrumbs pop a crust on the salmon before baking. If you have lime rind, crushed peanuts or coriander, they can be mixed with breadcrumbs. Or you could bake the salmon with sweet chill sauce on top

Ha, yeah it's not great but there's nothing here!

I so eat a bit of fish and the salmon sounded lovely ... I have no salmon though 😥I've just been delving in the freezer to see if there's a bit of frozen fish I'd forgotten about, but it seems to be entirely full of ice lollies.

Might have to put some beans in the pressure cooker to avoid infinite sadness

I did sneak that "vegetarian" in there, but anyway I wouldn't be cooking harissa chicken thighs between now and when I go to work in the morning!

Do you have any Greek yoghurt, cucumber, mint etc that you could use for a raita to have alongside it, perhaps with some feta or halloumi?

Some kind of sauce - chilli or harissa, tzatziki or tahini dressing or just yoghurt, garlic and lemon

Some kind of fruit/veggie - whatever salad is in the fridge or chopped apricots or avocado or even a cup of frozen peas or sweetcorn mixed in to defrost

Some kind of protein - beans or dry pan toasted nuts or feta

Not all of that. That would be disgusting. But I'd mix and match something together from those categories.

Oh lots of good ideas that I will revisit. Hadn't thought of nuts and I have a big bag of hazelnuts that ds's girlfriend left here. I'd actually just this evening eaten the last tin of peaches, but I will definitely try that curry, always have chickpeas.

Have gone for the easiest prep of beans in the pressure cooker, and I have some mini wraps somewhere, so thanks to those who pointed out that Mexican was the way to go.

Now off to amend my shopping order to make sure I always have things to go with rice!
