Best recipe for tomato pasta sauce

I buy pasta sauce far too often and want to start cooking it from scratch for both health and budget reasons. Have tried a couple of recipes but neither were great- please share your favourite tomato pasta sauce recipes.

The best recipe I ever followed called for a good chunk of butter. I’m not sure how authentic it was, but my god, it was good!

Soften a chopped onion, add garlic and dried thyme.
Add 2 grated carrots and 2 tins of good tinned tomato - Mutti polpa is the best. 2 tins full of hot water, a chicken (or veg) stock pot (I often will use fresh chicken stock from leftover bones, that fat gives a lovely velvety finish)
Salt and pepper then simmer for 2 hours ish.

I made a bacon version the other day, fried off 2 small packs of cubes pancetta, removed then started with the onions and added the fried pancetta just before the tomatoes go in.

I blitz it all when done.

Wow, so many great variations, think will start with the simple ones (fussy kids) and then play around with some of the additions. Now trying to decide if I can be bothered to do a massive batch cook in this heat.
