what to make with lots of courgettes?

Any suggestions, apart from soup or ratatouille? I've got about 12 in the fridge.

Thanks for all the fab suggestions. I made a kind of frittata with grated courgettes last night, which used up 3. I think I'll be going for the aubergine substitute tonight :)

Simple Spicy Salad. Grate a courgette or three (depending on size of courgettes and crowd). Finely chop chillis (about half a chilli per person is right for me but adjust for your taste). Chop mint. If you don’t have mint I’ve just chucked mint sauce in with the dressing and it’s fine but not as good. Salt and loads of pepper. lemon zest and juice. Extra virgin olive oil. Mix.

you can add peas or a little spring onion if you like but I think it’s best without messing it about too much.
