Ideas for a light lunch with only a corner shop nearby.

Just that really, got two friends joining me for lunch on a caravan park. What can I do for a lovely light lunch with limited availability of ingredients.

Houmous/other dips with flatbreads/pittas/crackers and crudités?

Not sure what kind of corner shop it is, but they may sell tubs of antipasti/olives/falafel, which You could serve with flatbreads.
Or cheese crackers and chutney and sliced apple ? Bread and balsalmic and olive oil?
Make an afternoon tea with sandwiches and mini cakes/ biscuits ?

Spanish omelette and green salad
Tuna and potato salad or salad nicoise

That tuna salad looks lovely.

Decided on beef sandwiches with tomato salad and a few fried potatoes.
