What to serve with roasted sweet potato salad?

My Mum and dad are coming over for tea tomorrow evening, so there will be 5 of us to feed.

I've got this Hello Fresh Mexican roasted sweet potato salad recipe left to cook, but it's to serve 2-3 people, so I need to serve something else with it or have it as a side dish.

Should I go with the Mexican theme and do some chicken fajitas?

Or something with beans/pulses?

Go with the salad theme and find another chunky salad?

I've got a standard class Tesco round the corner and a short amount of shopping time tomorrow morning. I won't have a lot of prep time so I don't want anything too fiddly.


No allergies, intolerances or dietary restrictions.

I would stick with the Mexican theme and do some grilled chicken with Mexican style spices. Something like this:

Roast chicken, beef or leg of lamb. Cook low and slow if you prefer to reduce last minute faff. It will all be fine.
