Kid friendly, non boring salads

Sorry if this is obvious or already been done. Dd is a bit picky over salad veg, won’t eat raw tomatoes ( think it’s the texture) spring or raw onions, coleslaw and struggles with coloured leaves. (Sensory needs not just picky really)
I’m so bored of a basic green salad or cous cous with veg through it.
please help me out with salad recipes that have more to them than a few leaves on a plate!!

Love the Mexican taco bowl what a lovely idea. Trying a salad tea tonight using some ideas. Will feedback what worked! So many great ideas to try. Thanks everyone- keep them coming if you’ve got any more!!

Well I tried setting out a range of different salads including with bulgar wheat etc with some cheese, hoummus and nice bread.
She tried celery and avocado for the first time so wasn’t a complete waste but she didn’t eat much of it. I will keep trying though, maybe more salads alongside meals rather than salad as a meal might be her ‘ thing’ .

Great that she’s trying new things!

I was wondering if a chopped salad might be worth a try? I make (well my machine does) and my nephew loves it, as he can eat it with a spoon. It’s great as bowl dish or as a side. Also easy to change with ingredients that you like or just to make it differently.

Ingredients
7 oz carrots, cut into pieces (approx. ¾ in.)
7 oz red bell peppers, cut into pieces (approx. 1 ¼ in.)
7 oz broccoli, cut into florets, plus stems sliced into pieces (approx. ¼ in.)
5 ½ oz dessert apples, stems removed, quartered
1 oz sunflower seeds, unsalted
1 oz olive oil
½ oz freshly squeezed lemon juice
1 tsp honey
1 ½ tsp Dijon mustard
1 tsp fine sea salt
¼ tsp ground pepper

Basically put everything in a food process and give it a whizz, depending on how chunky/fine you like it.

Griddle lettuce is really nice too.brings out it's nuttiness.
Getting some fun shaped pasta lots of places do helps too.
