Beef sausage recipes?

We've got some beef sausages... I know we could just sub them in to any pork sausage recipe, but I'd like to really taste them (they are good local sausages).
Anyone have a nice beef sausage recipe which really works with the beefiness?

If they're that good (assuming high % meat ), I would just plain grill them - not stick them in a recipe with competing flavours. Then jazz up the veg .

In this weather, I wouldn't want to be around a cooler more than completely necessary anyway. Just cook them in the oven and serve with a salad or two and crusty bread

Good point, may be best just to eat them in rolls or something. Yum!
