My daughter is allergic to eggs, can anyone recommend that I can use instead when making escalopes?

Thank you so much for this, I never thought of using vegan mayonnaise, we have some in the fridge as well!

I often use ordinary mayo as I find it a bit wasteful using an egg when it's just me and I always have a jar in.
It works really well.
