Veggie pasta recipe, no peppers!

Hello! Inspired by an article I saw recently, I am looking for a pasta recipe that doesn't involve peppers, courgette or onion! My children will refuse to eat these, though I have been known to blend it and they are none the wiser! Anything either carrots, brocoli, cauliflower, peas etc are all good!

I always roast a few different varieties of tomato then add garlic and basil or whatever you like.

Grated carrot could go in the blender with it all if it's been cooked first?

Will they eat mushrooms? You could chop up some mushrooms and fry them to add in the pasta once the sauce is on?

Do they dislike all peppers? I only really like yellow orange and the long pointed red ones. They all taste really different to me.

How are mushrooms received? Not always well received by kids but I love pasta with mushrooms and blue cheese.
Pasta bake with butternut squash and sage is nice.

I make two really really easy and lazy veggie sauces

Roast tomatoes and feta with some garlic and salt in the over once it's done mix if all together for a tasty sauce

Blend beetroot garlic oil and salt and pepper together for a tasty sauce then sprinkle with feta and dill.

Both so easy but so tasty xx

Pumpkin and pinenut pasta. I only use this recipe as a rough guide. I usually add in onions and blend it to a fine sauce, and add condensed milk, cream or creme fraiche but silken tofu might be an option too to create a creamy sauce. Sometimes I leave it chunkier like the recipe.

Do you eat eggs/dairy? A basic carbonara base (without the bacon) can be great to add in mushrooms, peas, broccoli or cauli

Roast some tomatoes, beetroot, carrots and tenderstem broccoli with garlic oil drizzled over.

Smoosh tomatoes, stir into pasta put roasted veg on top, put cheese (cheddar and mozzarella here) on top of it all and put under grill until it browns. (I'd have it with onions, courgettes, aubergine and peppers too.... or any combination of what's left in the fridge/veg cupboard)

Would they like roast peppers.ive found our like anything veg roasted.
Make a macaroni cheese and add broccoli bacon and tomatoes.or peas and bacon.

Cream cheese, broccoli and veggie pesto stirred through pasta is delicious.
I like it with blue cheese too but not sure that'll go down well with kids.

Thanks all! These all sound lovely. Trying to make the most of the leftover veg from Sunday roast and freeze it. I am in no way a cook, can follow a recipe but creating one isn't for me!
I was thinking of steaming the carrot and brocoli, and peas, and adding it to a tomato sauce I make ( onion, garlic, tin tomato and oregano), mix it in, top with cheese and bake for a while. Does that sound OK?

There's a Jamie Oliver recipe for rigatoni with aubergine, tomatoes and mozzarella which is really delicious.

Personally, I find peas and carrots in a tomato sauce with pasta a little weird but if you like it, go for it. It does however remind me of a dish my mum used to make after a roast which was basically any left over cooked veg in an over proof dish, then make a cheese sauce, pour over the veg, sometimes she would also add a few dollops of horseradish or cranberry sauce too. Then make mash and beat two egg yolk into it (sounds odd but makes the top extra crispy). Put the mash on top of the cheesy veg and rough it up a bit with a fork, then bake.

Penne regate, with smoked bacon lardons, green pesto to taste, peas and broccoli, maybe mushrooms, maybe sugar snap peas or green beans (whatever green veg you have going really but make sure it's slightly undercooked and stays bright green) and loads of parmesan. Grill or poach some chicken breasts, slice and add to it. Good hot or cold.
