What vegetables work well in katsu curry?

Making a katsu curry tonight. What vegetables work well with it? We don't eat meat, but I might add some prawns.

aubergine works very well. Esp breaded.

cauli is also a good one, but i always roast my cauliflower first and then add it to the my katsu

I use slices of sweet potato quite often. I cook them on a griddle for a few minutes to soften a bit and then the rest of the cooking is when they're fried.

I've also been known to do a bastardised version. I make a mash with fried onions, sweet potato, Brocolli and season then I turn them into a sort of croquette.

Do you mean to bread and fry as a cutlet or to mix into the sauce? Aubergine is my favourite thing to have breaded, though sweet potato works too. In the sauce the classic vegetables are onion, carrot, potato which are delicious, but most vegetables would work fine.

If you want to emulate a restaurant style Katsu curry use breaded aubergine in place of the chicken. As for chunky veg baby corn, mangetout, onions and sweet potato are all nice
