I had a delicious dinner last night that was healthy, quick and easy!

just had the leftovers for lunch and it was still good so thought I’d share…

Pork Mince Lettuce Cups

first thinly slice an onion and grate a carrot - marinade in white wine vinegar, some sugar/sweetener and a pinch of salt while you do the rest.

chop half a red pepper, some spring onions, a fresh chilli (deseed if you want), cucumber and a few roasted salted peanuts - quite small.

fry pork mince with some garlic and ginger until no pink bits remain (about 6 mins) sprinkle in some 5spice, soy sauce, rice wine vinegar and/or fish sauce and cook for a minute more.

serve in little gem lettuce leaves with the (drained) carrot and onion and all the other bits on top with a drizzle of hoisin sauce if you like.

I thought it would be ok but it was really, really good, and it filled me up which surprised me also…

I feel that’s a bit of a Jamie Oliver quick and easy. Most people would consider that a usual amount of prep and cooking for a meal.

Im veggie though, but it sounds nice.

That sounds delicious, I guess you could serve in wraps or maybe even pittas too.

🤣 it's wordy but that sounds like I could make it in 15 minutes. I don't have many recipes this quick (except Kwoklynn Wan's veggie Chinese). But on the topic of Jamie, his silky courgette bow-ties (creamy pasta) is up there as one of the quickest. It's not on his website but you can find the recipe on Pinterest through google.
