Bread and diabetes

OK so a few weeks ago I posted that I had got a bread maker, thank you if you helped on that thread.

Now last week my GP has informed me I have type 2 diabetes, so wonderful ladies of MN (and the odd gent) do you have any recipes to make lower carb or lower GI bread?

I'm thinking about what I can add eg grains, nuts etc.

My grandmother used to bake bread with cheese and onion in it, so I'm not sure whether to give that a try.

Any ideas?

Obviously bread is mainly carb so it will be eaten with other food, eg I have a low carb veg soup in the slow cooker at the moment.

I don't think there are any decent low carb bread recipes for a bread maker, there are numerous for an oven or microwave though, most use almond flour as a substitute. Dp reversed his diabetes through keto dieting - so no carbs, he's have low carb soups but with no bread etc.

I would just make the seediest wholemeal/rye loaf possible and eat in very small quantities. It will be pretty dense and keep for ages.

@pizzaand my friend did the same but with shakes, but the shakes are milk based and I'm lactose intolerant. Also due to disability and mental health issues food is one of the few pleasures I have left.

The almond flour is interesting, I might contact the manufacturer to see if I can use it, there are a few gluten free recipes so it doesn't all have to be strong white flour.

@NotMeNoNo yes I'm looking at the various granary type recipes. I know I won't be eating just bread I'm trying to incorporate it into a meal so with a soup made with low carb veg, or as toast with eggs and veg.

I get their low carb rolls and they're pretty good. Their low carb hot cross buns are great too!

I was told seeded bread wasn't good to have.

Sourdough was recommended but I can only find white sourdough, I don't know which is worse..normal wholemeal or white sourdough.
