Couscous salad

Looking for an interesting roasted vegetables and couscous salad recipe. Something with a bit of wow-factor which is also a doddle to make.
If anyone could point me towards such gem, I m certain it's one of the MNs!

It's in French but it is the best recipe I have found.

Best thing is to put all the vegetables into the couscous the night before, no water and the couscous will soak up the moisture from the vegs.
