I live on my own and at the moment have trouble sleeping, therefore often spend the entire day shattered and can't be bothered to do anything. Today I have felt on the verge of falling asleep all day, so the thought of cooking has not appealed. Instead I've just eaten a bowl of cereal for lunch and the same for dinner. Whilst this isn't the most unhealthy option, I know that eating healthier would be better for me, so what are your go-to having a lazy day meals? Preferably low/no carb (I know cereal doesn't fit into this) but any quick and easy things you do.
My other go to is cheese with slices of apple and a bit of chutney 😋

Low carb - anything eggy - scrambled, boiled eggs. I fry chopped veg, put in an oven dish, add goats cheese and pour 6 eggs over, season and bake for 20 mins. Lasts for 2-3 meals with veg or salad. Steaks, pan fry with mushrooms- ready in a few minutes with salad. Whole roast chicken with whole veg like parsnips, carrots roasted with it.
Salads - make a huge bowl of everything then dip in - can last for a couple of meals - add grated cheese, chicken or whatever protein.
Key is to have some good fats plus protein and veg to stay healthy.
