Favourite omelettes

Roasted tomatoes, oregano and mozzarella - tastes like pizza topping!

Hard to see past ham and cheese. My alternative is aux herbes with a heavy hand on rosemary. I sometimes add sliced mushrooms. Occasionally do souffle omlette.

Baked beans. Bean omelette kept me alive as a veggie kid in the 70s. I think they're delicious. I could be wrong though

I don't like cheese in an omelet, it makes it heavy and oily. Try without, you won't be disappointed.

I only used to ever have spinach, tomato and salami/chorizo. But I have recently tried this one and really enjoyed it. Really fancy an omelette now 🥚

My definite favourite is fine herbs. I use chives, tarragon and parsley. I like a very very loose egg omelette. With tomato and buffalo mozzarella salad.

I also like smoked salmon and cream cheese.

Ah dammit I've got smoked salmon in the freezer - that will have to be next week!
