Cheesecake?

I've always loved cheesecake, and I've decided to finally try my hand at making one. Anyone I know who makes them regularly always say airily "oh its simple" but I know that when I tried once before it really wasn't! As I recall, the base didn't turn out right, not enough biscuit, maybe not enough butter to make it stick together. And the topping tasted a bit meh and I wasn't keen on the texture.

I think that I had followed the Philadelphia recipe for that effort.

So, can anyone suggest a fairly easy recipe or offer any hints to make a delicious cheesecake please? I'm newly retired and a fairly basic cook, only bake brown bread and apple tarts occasionally but looking to improve my repertoire!

Thanks in advance.

I do this one a lot and don't have to add icing sugar as it's sweetened with jam that's got no added sugar in. Also I just break the digestives up and put them in without mixing with butter. Less calories but still tastes gorgeous I add a bit of frozen fruit and fresh strawberries.😋😋😋 www.stdalfour.co.uk/recipe/strawberries-and-cream-cheesecake/

Not sure if you're looking for a baked New York style cheesecake if you are, this is the one I make www.bbcgoodfood.com/recipes/new-york-cheesecake

I always add a few extra biscuits for the base and about 5g extra butter. It's very high in calories and with only two of us at home I have to freeze it in slices to stop me eating half of it in one sitting.

Felicity Cloake's recipe amp.theguardian.com/lifeandstyle/wordofmouth/2011/may/19/how-to-cook-perfect-cheesecake (although the top cracked it was delicious)

This one is pretty foolproof, as are most of her recipes.
