Bit of a tight month so delving into to freezer for weekday dinnersm

What can I possibly make with frozen chicken drumsticks thats suitable for a 5 Yr old who doesn't like spice /dh who loves spice but hates pastry and me kinda middle of the road.

DH also working nightshift so mealtimes all topsy-turvy turvy - he's preferring to take a wrap or chunky toasted sandwich with him.

I know I can skin them and take off the bone but then what? Was thinking enchiladas but that won't suit DC.

Inspiration please

I did a tray bake for dinner that was tomato, red onion, garlic, pepper, cauliflower and feta cheese, all doused in olive oil and bunged in a hot oven for a hour. I had sausages in it but it actually would have been even better with chicken. You just need to find half a pack of Aldi greek style salad cheese that they're not allowed to call feta lurking in the freezer too OP!

Nigella has a whole chicken recipe that could work with drumsticks instead but you'd need to adjust the cooking time. Nigella recipe. She uses orzo pasta but I've also done it with rice (it's a bit stodgy wirh rice but v tasty). Basically fry the chicken in cast casserole dish, add stock, carrots, lemon juice, leeks, tarragon and garlic and simmer gently then add orzo, simmer a bit longer and serve.

We actually have orzo and all the spices so second recipe is a winner!
