… and I need to use it today.

BBC Good Food suggested mustard and herb crusted fillet.
Does anyone have any other suggestions please?

apricot stuffing - i think its a mary berry recipe. I sit it on top if i cant stuff it as such

Stuff it with mozzarella and wrap in bacon.

Serve with salad / potatoes.

Or — slice into medallions and pan fry, can Ada bit of wine/ cream for a quick sauce, serve with rice.

I did one yesterday — rubbed with oyster sauce and five spice powder, flash roasted and served with rice.

Stuff with herb and breadcrumb stuffing, drizzle in olive oil, roast and serve with apple sauce and mashed potatoes

I was going to say apricot stuffing also! My DM used to chop apricots and some herbs and mix liberally with cream cheese then stuff and roll.

I'm cooking pork fillet tonight. Will be slicing into steaks and frying then adding a mustard cream sauce, garlic roasted new potatoes and crispy roasted kale.

I usually use pork fillet to make Nigel Slater’s pork in cream and mustard sauce, served with mash and stir braised Savoy cabbage.
