Have a packet of filo, bought for a reason which I can't remember 😳, something to do with delectable spinach feta concoction. However, would like to find something much easier, less of flipping the sheets into marvellous parcels and more with free hand type of stuff. Easy I mean 🤓
All ideas much appreciated!

I make little baskets and fill with different things.

I did these at Christmas and I did duck and hoisin, prawn and chorizo and beef with horseradish and lettuce and cucumber. Went down well.

Make pie filling of whatever you fancy (leftover chicken etc), top with filo.

This is very tasty - you basically just brush a couple of sheets of filo with melted butter and wrap up the salmon like a parcel then bake - adding a bit of lime juice, zest, coriander leaf, spring onion and chilli as flavours in the parcels. If you haven't got all, just what you have.

I often have it with a ready to go bag of stir fry veg and sauce sachet from Sainsburys / Waitrose and that's it.

Fill a dish with precooked chilli ( veg or meat). Scrunch buttered or oiled filo over the top and bake until the pastry is crisp and the filling reheated

I was going to suggest oven baked samosa but that's lots of flipping!
I've seen it being used for the toppings of pies. Just scrunched up on top if fish pie, cottage pie etc

Mini quiches!

Cut the filo into squares & use to line muffin tins - 3 layers, spray with oil between each & slightly offset each layer so it looks pretty.

Add whatever you fancy to each - cooked Mediterranean veg, ham, tuna, feta, chicken, salmon, mushrooms, tomatoes etc etc.

Mix eggs & a glug of cream/full fat milk. Carefully pour into the quiches then add cubed/grated cheese & a sprinkle of herbs, if you have anything that goes with the filling (eg basil with med veg, dill with salmon etc).

Bake in a pre cooked oven until pastry edges are crispy & filling set but a bit wobbly.
