Have I poisoned us all!?

Took some sausage/chipolatas out of the freezer last night around 10pm. Popped them on the kitchen side with the intention of putting them in the fridge this morning. Got distracted, forgot, and so cooked them tonight around 6pm for tea.

Now googling and I have found out that it can be really dangerous (?) to leave sausages out on the side for more than 2 hours due to bacteria growing.

Have I given the whole family food poisoning?!

Nah it will be fine. Growing up meat etc was always left on the kitchen counter all day and night to defrost!

If they aren't supposed to be out on the side for more than two hours then how do you defrost sausages then? I've done it plenty of times.

These kind of questions boggle my mind. How is food science knowledge so woefully poor that anyone thinks a sausage on a bench for a few hours is going to mutuate to some kind of deadly weapon.

I don't know how some posters get through the day 😂

Tbf, the ops sausages would have been out for 20hrs! I think to defrost anything, the best way to do it is in the fridge.

@IcedOatLatte I am normally quite relaxed with use by dates etc but according to Google defrosted sausages can be dangerous which is what made me panic a little bit. 😅 I get through the day fine thanks.

It depends partly on the temperature of your kitchen. It's not ideal but likely to be fine especially if cooked well.

You'd know pretty quick if they were off as you'd be sick with vomiting or diarrhoea. Seems like you survived the night!

Assuming that you cooked them so that they were piping hot all of the way through it will not be a problem.

That's incorrect, @Sprig1. Cooking will kill any bacteria but not all types of food poisoning are caused by the bacteria themselves infecting you, it is caused by the toxins they produce. You can kill the bacteria by cooking but the toxins they have left behind will remain.

Hope you are all fine, OP. It will probably be ok. It really depends on what bacteria were on/in the sausages.
