hi all, so I see a lot of people saying how they use alot chickpeas and lentils, aside from the obvious Dahl do you all have any good recipes you would like to share? 😀

It's not actually a recipe but I like warm chickpea "salad" for a snack/incredibly lazy lunch. I heat the chickpeas in the microwave then put olive oil and salt on.

I just made this for dinner which was delicious! One pepper and a few mushrooms chopped up and sautéed with garlic and paprika, added some pre cooked packet rice and black beans, a bit of water (fulled the can that the black beans came in) added a teaspoon of marigold stock powder and two teaspoons of peanut butter. Simmered for ten mins then served with a dollop of crème fraiche on top. You could easily sub the black beans for chick peas or lentils.

This spiced red lentil soup is delicious. The blended lentils give it a really full bodied and creamy texture.

It's absolutely gorgeous! Had it for evening meal the last two nights. I'd just add that I use a whole tin of coconut milk (or cream, both work) because I probably wouldn't use the leftover stuff.

I don't use a recipe as such, but I love Coronation chickpeas served on a naan.
I just googled a recipe for Coronation chicken, then swapped the chicken for chickpeas and adjusted to taste, I always add extra lemon juice and top with fresh coriander and quartered cherry tomatoes.
I top the naan with little gem lettuce and thinly sliced cucumber before adding the chickpeas.

The Quick Roasting Tin has plenty of chickpea ones. There's a paneer, chickpea and toasted naan one (haven't tried) and one very simple one with chickpeas, red onion and sweetcorn roasted in spices then served with yoghurt etc. Really good.

Cheesy Chickpea Patties

2 x 410g cans chickpeas, drained and rinsed
60g grated cheese
1 egg
1 tbsp flour
1 tbsp tahini paste (if you have it)
2 tbsp olive oil
chopped parsley

Bung everything in the processor and whizz to form a nubbly purée. Scoop out spoonfuls of the mixture onto baking sheets, then bake for 30 minutes at 160­°c until just tinged with brown.

They are nice with salad and yoghurt dip, or roast vegetables. I often take them to work for lunch

Green lentils are great instead of meat in a shepherds pie, if you aren't vegetarian, (I'm not), a good beef stock and a splash of red wine really means you don't miss the meat.
I also add finely chopped carrots, onions and mushrooms, lots of people use celery but I don't as I can't stand it!

Tin tuna
Spinach frozen or fresh
Salt and pepper
Curry powder

Cook for a while. Scoff.

I follow thekitchendoctorandnum on Instagram and she posts lovely recipes, often with beans, lentils & chickpeas.

I make this one a lot, but add a tin of coconut milk. It is so so good, fast, healthy and very cheap.

Chickpea and potato curry

Recipe
1 red onion
4 cloves garlic
1 thumb size piece of ginger
400g tin chopped tomatoes
1 large potato, cut into 1cm cubes
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon dried mango powder (amchur) - optional
1 teaspoon salt
1/2 teaspoon chilli powder/paprika (optional)
1 teaspoon cumin seeds
100g fresh spinach or 3 cubes frozen leaf spinach
400g tin chick peas
1 tin coconut milk (my addition.)

  1. Blitz together (or finely chop) the onion, garlic and ginger.
  2. Heat a teaspoon of oil, put the cumin seeds in for a minute and then put the onion, garlic and ginger in. Sauté for 5 minutes, then add the salt and spices. Sauté for one further minute and then add the chopped tomatoes, chick peas and potatoes.
  3. Cover and cook for a further 5-7 minutes or until the potatoes are completely soft, adding a splash of water if too thick. Add the spinach and cook until wilted. Serve with a sprinkling of fresh coriander (and fresh chillies if you dare!)

Ottolenghis Confit Tandoori Chick peas is a chuck it all in the oven in one pan recipe and is so easy & tasty.

Also his Chick Peas with Parmesan & butter is rich, comforting & delicious.
I've just made it for the first time today.
Mind you it should taste good with the quantity of butter & cheese in it 😳

Or home made baked beans.
Soak beans overnight, rinse and boil for a few mins at breakfast time, leave to soak while you work. After work beans will be almost soft so bring back to boil in fresh water while you make a tomato sauce. Drain beans, mix in and simmer while the sausages finish cooking.

I’ve made this a few times and it has been so nice:

Roughly chop a couple of peppers, a couple of garlic cloves, add a tin of chickpeas and some cherry tomatoes. Drizzle in olive oil and add seasoning plus Moroccan spice mix
Shake it all about a bit then roast for 20 minutes
add meatballs or meat-free meatballs
roast for another 20 mins, then again give it another good mix
serve with cous-cous

You can add whatever veg you like, I’ve used up sweet potatoes and squash in this. I I usually crumble on some feta at the end.
