Can someone post the recipies for veggie lasagne and veggie chilli please as i used to cook them every week but have given up red meat and a veggie option woulf fill the void

spaghetti bolognaise (lentils or quorn)
pasta with pesto or spicy tom sauce
jacket potatoes + cheese + beans
bean chilli
Curry
Lasagne

(yes I know there's a pasta theme )

Baked sweetcorn:

1 tin of creamed corn
1 tablespoon of margarine
2 eggs
1/2 cup sugar
2 tablespoons flour
1/2 teaspoon bakingpowder
pinch of salt
1/2 cup milk

Mix everything together except flour. Mix flour with bit of cold water. Add to mixture and mix.
Bake in greased oven dish till brown on top.
Bake at 180degrees Celsius.

lasagne - chop up mushrooms, celeery, onions, garlic, peppers, carrots, sweetcorn, fry until softish
Add tinned green lentils / quorn mince
add herbs, red wine and tomato
boil then simmer until vegetables are soft
layer with lasagne sheets, cheese and white sauce / mushroom soup
top wwith cheese and cook for ages!

Butternut squash

250ml cream
1 packet white onion soup
1 packet of mushrooms
1 butternut squash

cut butternut in rings and put a layer in greased oven pan.
cut mushrooms and put a layer on top of butternut.
Repeat butternut and mushrooms.
Mix the soup with the cream. Pour over the butternut and mushrooms.

bake at 180degrees celcius

I was going to surprise MamaG and call in on her when I was next passing and just wondered what she might dish up for the bears for dinner. We are carnivorous us bears but not adverse to a veggie option but I was thinking that it might be difficult to be inspired for dinner ideas, that's all. I should have know the MNers would be inspirational vegetarians and I look forward to popping round MamaG's to sample some dishes!

Not fully veggie, but most of the time anyway:
Butternut curry with ginger, coconut milk, brocolli etc. (butternut squash and coconut milk is one of the yummiest things in the world: recipe for soup;
Quorn burger with salad and curly fries;
Pasta with tomato sauce, brocolli, spinach (need iron combined with Vit c in tomato to prevent anemia);
Chilli made with lots of different types of beans: red kidney, borlotti, other beans in tins.
Lots of baked beans on toast, as it's well tasty

KBear, its only me thats a veggie, DH and the LittleGs aren't.

Call in next time you are passing, do, when is it - are you goin to scotland this year? Or somewhere else? Don't think you've mentioned it....!

Veggie chilli:
Chop and fry onion, garlic and peppers (green, red, yellow, what ever) until soft. Add in some chilli powder. Then stir in can of tomatoes. Bring to boil, then reduce to bubbling for about 20 minutes or so (can use this time to cook rice). Add can/2 of beans (having drained and rinsed them. Red kidney beans are good, but others work too). Bring back to boil. Season, maybe add in more chilli powder. Serve with rice, guacamole, salsa ... whatever takes you fancy. The cafeteria at work adds in tons of other vegetables as well, like brocolli, carrots, whatever is around.

baked beans curry, it's my favourite with chilli, garlic, ginger, coriander, cumin, tumeric, paprika, garam masala. onrice or with pitta bread.

dhal - lentil curry.

vegetable curries - known as sabji.

ps i am indian you might have guessed and there's loads - spinach saag aloo all home made a healthy
