I have a load of left over roast potatoes from yesterday's lunch and lots of white fish and salmon in the freezer - can anyone suggest what I could put together for dinner?

I’d grill the salmon etc have with refried potatoes and salad. Lots of lemon on the fish.

A creamy fish pie, with a crispy roast potato topping

Is the salmon raw?
Doesn't help with the rest of it, but we are having this tonight.

Presumably the fish is cooked?

If so then I would make a massive salad of green leaves, cucumber, maybe watercress or sliced fennel, etc with a lemony herb dressing (maybe dill?) and flake the fish over it.

Then heat roast pots in microwave (on kitchen roll to absorb excess fat) and serve either in salad or as a side dish (depending on how big pots are). Season well!

Fish cakes?

Calafsidentity · 18/04/2022 13:39

Glass of rosé would be good with it!

Fish cakes is the obvious answer surely!

I'd make a creamy and coconutty fish and potato curry

Use leftover roasties for patatas bravas or huevos rancheros
