I love Aubergines

Honey Soy Glazed Aubergine Bahn Mi, fry slices of aubergine in a pan, once they're mostly cooked add in honey soy sauce (I also like to add smoked paprika to this) and continue to cook until it reduced a bit and goes sort of sticky. Serve in a baguette with quick pickled veg and spicy mayo.

I also love the following recipes, none of them are quick but they all have a fair bit of hands off time.

Scoop middle out leaving them around 1cm thick. Bake the shells and whilst they're in chop the flesh and fry with some baby tomatoes, spinach and chorizo, herbs and anything else you fancy. Pile the mixture back into the shells, top with a bit of crumbled feta and bake for a few more minutes.

This miso braised aubergine is really delicious. The aubergine is soft and silky, the sauce is rich and the chilli through it works so well. Perfect just with white rice.

Ottolenghi's pasta alla norma is also wonderful. The best pasta alla norma I've made. The aubergine break show beautifully in the sauce.

Escalivada is a Spanish dish from the north east, vegan and absolutely scrumptious.
You roast a big red capsicum,( a green one also if you like)a couple of aubergines, couple of onions( I like to use purple) head of garlic, a couple of good tomatoes
Watch and remove from oven when each is cooked to perfection, so none overcook.
When you can handle but still warm peel each vegetable and tear with hands into strips, save the juices from the roast vegetables.
Place the vegetable strips neatly in a dish so you may have red pepper, green if using, the aubergine strips, tomato, onion , garlic cloves scattered
Season with salt flakes, wine vinegar and good olive oil...
you can add black olives, capers, spring onion etc...but not necessary and less authentic
