Studding a leg of lamb

Hi, how far in advance do you stud a leg of lamb with rosemary and garlic? Are we talking an hour or a day?

I do it just before cooking.

Usually when it's just out of the fridge as the meat is firmer, then leave to warm up before cooking.

Consider adding a wee sliver of anchovy into a few of the holes. Sounds minging but tastes good (I don't even like anchovy).
