that doesn't have huge lists of ingredients?
I'm looking for fairly simple recipes using just a few ingredients.

Not sure it exists!

The roasting tin series by Rukmini Iyer has good fuss free recipes using lost of fresh ingredients. I find them pretty simple but ymmv.

Hairy Dieters by the Hairy Bikers - straightforward recipes that taste OK. You should be able to pick a secondhand copy up for about £4 on ebay.
