salmon en croute freezing help.

I have taken out of freezer and defrosted a side of salmon as was going to make salmon en croute for tonight. Norovirus has hit us so had to cancel family coming over. if I make the en croute, I will have to cook it to refreze to use a different time. I'm thinking though when I come to reheat it won't be that good will it? not sure if there is anything else I can do though?

Did you defrost in the fridge? How long was it thawed? If it's been kept very cold and for a short time Id put it back in the freezer. If you make the En Croute it would be fine reheated, I think Id cook it fast from frozen so it doesn't go soggy. I took smoked haddock first thing to make kedgeree but I've got post Covid fatigue so we're having frozen battered fish and air fryer chips. Haddock now back in freezer.

@TheWatersofMarch. I got it out yesterday so definitely can't refreze it now. think I will have to do as you suggest really.

fish and chips sounds perfect for a no faff Good Friday.
