What can I make with left over mashed potato?

My child does not like shephards pie or anything overly cheesy.

Any ideas? Google is just throwing up cheesy potato balls and shephards pie.

What is it about shepherds pie that isn't liked? Bacon, onion, sausage and baked beans topped with mash makes 'cowboy pie' if that might be a success?

I know you said they don't like cheesy stuff but..... every time we have left over mash, I fry it with cheese and bacon bits until it's golden. Serve with salad cream.

Freeze it so you have mash ready for the next time you want a quick tea. Just microwave and stir in a bit of butter.

Shape them into balls, roll lightly in flour and fry in butter. Not healthy, but kids will eat it...

Fishcakes- mash with tinned salmon, maybe some chives, salt and pepper, roll in egg and then breadcrumbs?

Or my mum used to make potato cakes - shape into burger shapes with salt and pepper to season, then put in flour each side. Fry as if it's fried bread. Delicious with egg, bacon and fried tomatoes instead of toast.

Or bubble and squeak - mix with leftover cooked veg ideally including cabbage, fry in a frying pan with butter.

Finely chop some red onion and fry with chopped bacon.
Mix into the potato. You could add a little chopped parsley if you want.
Scoop out a ball of the mixture, roll into a ball and the squash so its a disk.
Put a little fry light or oil into a frying pan and cook until hot through and brown on both sides.
Serve with beans, sausages or anything you want.

Nigella Lawson has a green cakes recipe which is a bit like vegetable rissoles made with mash, breadcrumbed and fried.
When my DC were small we'd wrap Swedish meatballs in cold mash, put them on a greased baking tray, spray them with oil and bake them until they were crispy.

I make fishcakes but with any whitefish for my sons, or potato cakes with any flavourings liked. I also like to make little nests with it and put in oven with beans and/cheese, bacon bits anything your child likes can be reheated in the nests.

Probably not good for dieters, but delicious.

Lumps of your cheese of choice.
Fashion mash around them.
Dip in egg.
Suppose in breadcrumbs.
Deep fry.

Gnocchi or potato cakes or quiche case - add flour, same quantity as potato. Mix with spring onion and finely shredded cooked kale or spring greens and fry for bubble and squeak
