Does anyone have any quick and easy dinner suggestions?

Work is busy just now and coming home to make a full dinner is a bit Hmm

Fresh pasta with peas and sweetcorn thrown in. Drain, add a dollop of cream cheese, smoked salmon, lemon juice, plenty of black pepper and some fresh parsley.

Cook pasta, fry off some onion, garlic, chilli and a chopped red pepper. Add a tin off chopped tomatoes, splash of balsamic oregano (dried fine) and leave to reduce down whilst pasta cooks. Top with Parmesan and serve.

Breakfast for dinner.

My quickest, easiest meals I find are the more expensive option - steak or lamb chops served with new potatoes and steamed veg. But it's incredibly easy, very little prep work, and cooks quickly.

Quick thai=style curried soup - curry paste, coconut milk, stock, veg. Steamed chicken breast and rice noodles. Done.

Any basic pasta sauce - can be prepped in time it takes to cook pasta. A few examples:

  • - Onion, bacon, broccoli with lemon zest, white wine and creme fraiche/cream.
-- fried courgettes with lemon and chilli and feta cheese
  • Smoked salmon, dill, peas, creme fraiche

@Triffid1 I know what you mean about the expensive option. Thanks for that great list the thai style curried soup sounds lovely.

Bacon and pasta
Put pasta on to boil
Fry bacon
Add fine chopped onion
Any other veg you have around peppers, mushrooms, corn green beans etc
Add either your fav herbs or a dash of hot sauce. And a tin of chopped tomatoes.

Just before the pasta is fully cooked drain it and add bacon tomato mix and allow the pasta to finish cooking

It can be on the table in 15 mins and is cheap tasty and filling.

Any chance of prep before.as in things like bunging a tray of chicken thighs and a sauce,chopped veggies in a dish to sit in fridge.
Franferter jar of dolmio pasta with cheese on top is delish.easy
Sausage and beans and tinned tomato in a casserole.
Make double batch of things so u can mix it up for the next day.
Cook awhole chicken one evening whilst your watching tv..lwt it stay in fridge then you've got chicken to put easily into dishes for a few days- pie,with jackets,curry etc
