Veggie Roast

I’ve been trying to eat more veggie meals lately and was thinking of doing a veggie roast this Easter. But all I can think of as the main event is a shop bought nut roast, which feels a little meh.

Does anyone have a favourite homemade recipe or recommend a fantastic veggie main from the supermarket?

Only requirements are that it should go well with roast trimmings! Smile

The thread was recently in AIBU which has a lot of suggestions. Personally, I don’t like nut roast so no advice there unfortunately. My family only do a big Christmas roast rather than Easter, but here are some things I've enjoyed. Some might be a bit Christmassy, but all delicious. I also love pastry, so most pastry based dishes appeal. But for me as long as the vegetable side dishes are tasty, I'm more than happy with potatoes and vegetables.

Morning, I’m afraid I can’t give you a proper recipe as I’m more of a ‘throw it all in together and see how it turns out’ kind of cook but I’m making this for Easter as I’ve done it a few times and it’s lovely.

Basically I defrost a few veggie sausages (I use richmonds. I shove them in a bowl and mix them with a couple of big spoons of cranberry jelly or sauce, some mixed up sage and onion stuffing and a bag of the merchant gourmet chestnuts - finely chopped. I mix it all up then spread it on one half of a pre made sheet of short crust pastry, fold over the other half. Make it look nice then brush over an egg wash (I’m not vegan). Then bake until cooked!

It’s really nice. We have it with all the usual roast trimmings. You can add other things to it as well. I’ve done it with mashed sweet potato added to the mix which worked well. I’ve also done it as a mostly nut roast with mushrooms.

The M&S Plant Kitchen beetroot bourguignon pie is delicious. It's in the frozen section. DH and I had that to share at Christmas at is was huge for two - would easily serve 3 or 4.
