Please share your cauli cheese recipes.
I tend to use a basic 5 min boil and drain the cauli, meanwhile make roux sauce and add grated cheese, pour over cauli in ovenproof dish and bake for 20 mins until browned and the cauli is soft. If no one is watching I add a spoon of mustard to the sauce to bring out the flavour.

Standard roux with extra mature cheese and mustard. Steam the cauliflower and make sure it's super dry before assembling. Add more cheese on top.

The cathedral city cauliflower cheese from Iceland or food warehouse is far better than anything I could make!!

I precook the cauliflower, make the cheese sauce (if I have time I’ll infuse the milk for sauce with onion, cloves, peppercorns and a bay leaf) and then add a generous grating of nutmeg. I prefer cauliflower cheese without breadcrumbs, though many prefer it with.
Ditto, minus the cloves.

Heaven.

I do it as you, but steam the cauli and often add caraway seeds to the butter when making the roux.

Lightly steamed cauliflower, lay in a dish, pour over double cream, sprinkle over loads of grated extra mature cheddar, give it all a good stir, sprinkle a little more cheddar on the top of the mix and oven bake.

It's the fastest, simplest method (if not the healthiest!) I've used over the years and is extremely popular with everyone I've made it for. I often add some crisped bacon, leeks, courgette, red peppers if I want to change it up a bit.

Chucking loads of steamed veg in a dish and using the same simple cream/cheddar method above then topping with creamy mash and browning in the oven is my DDIL's favourite comfort food.

Definitely roast the cauliflower first. Then pour over the sauce - some more grated cheese and back in the oven it goes. Delicious 😋

Fry onions and add to cauli in a dish
Make white sauce and add cheese
Season with salt, pepper, nutmeg, cayenne chilli powder
Mix all together
Whizz up some breadcrumbs and add herbs, maybe even parmesan
Add breadcrumbs on top and bake til crispy

I use creme fraiche, mustard, black pepper and loads of grated mature cheddar.
