I make a simnel cake, to the same recipe as Christmas cake, except I use whiskey instead of brandy, and I make the 'marzipan' with pistachio rather than almonds. (And no royal icing, obviously.)

I will have nutmeg cake, possibly lime chiffon tart and I am looking for a third. I’m not doing trifle because I need to do it all from scratch and can’t be bothered. Some sort of apple cake, perhaps? Apples are in season here now.

DS1 and I will be making a massive layered chocolate fudge cake decorated with a chocolate birds' nest with mini eggs and marzipan chicks, and a wreath of sugar daffodils, primroses and snowdrops. To be served with homemade vanilla clotted cream ice cream.

He's home from uni and wants to learn how to make lots of different cakes/desserts/sugarcraft/icings and frostings, so I'm having loads of fun Grin so far we've done pecan and maple coffee cake, marble chocolate almond bundt cake, carrot cake and apple crumble.

DD and I are thinking about making Rocky road no-bake cheesecake from Coop spring issue. The only problem is that it serves 12 and there are only 3 of us. DH doesn’t think that it will be a problem though.

Just messaged my 3 adult children to ask for their preferences, so watching with interest. Lamb for mains with Labneh and roast tomatoes, roast potatoes etc I was thinking a lemon tart with a fruit salad. I'm in awe of the Simmnel cake makers!
