Agree with the note about ginger. Do it half and half with a vanilla biscuit if you prefer. I have never used chocolate.

Tip: whatever fat/biscuit ratio you have, use less fat (butter or marg) than the recipe calls for. Each mix will be different depending upon what brand of fat you use vs what biscuit you use.

You can always add more fat. You really can’t take it out if you decide you have mucked it up.

We use home made gluten free ginger biscuits. It's a bit of hassle but worth it!

Thanks for all the suggestions everyone.
I was thinking probably something oaty as so much gluten-free stuff has long lists of weird ingredients.
My mum used to do a really good lime cheesecake with ginger biscuits. Now I’m torn.
You obviously don’t think bought gf ginger biscuits are very good @AllLopsided. Could I have your recipe, please if it’s not too much trouble. It’s for a group holiday so the excess biscuits would get eaten. I might have to give away any leftover gf flour though.

I've done a no bake chocolate cheesecake with GF bourbon biscuits for the base, and it was absolutely fine. I used the Schar ones.

I used this recipe:

No Bake Chocolate Cheesecake

Ingredients
150g bourbon biscuits
45g butter, melted
110g caster sugar
120ml double cream
150g dark chocolate, melted & cooled (or use half milk, half dark)
2 tbsp cocoa powder, mixed with a little hot water
200g tub of cream cheese

Method

  1. Crush the biscuits and mix with the melted butter and 1 tbsp of the caster sugar. Press into the base of a 18cm (7 inch) cake tin and refrigerate.
  1. Whip the cream to the soft peak stage. Add the cooled melted chocolate, then the cocoa powder mix. Blend well and set aside.

  2. Beat the cream cheese and the remaining sugar together. Fold in the cream & chocolate mixture thoroughly.

  3. Spread on top of the biscuit base.

  4. Refrigerate overnight.

I've made loads of gluten free cheesecakes using ASDAs own brand gluten free digestives.

Never had an issue they work just the same as normal ones.

Yes, the bourbon biscuits are filled.

I was uncertain of the recipe when I first tried it, being so used to using plain biscuits for the base, but it works well with standard or GF ones!

Hi @ManyATime I am abroad and unfortunately there are no GF ginger biscuits to be found! So we make our own, which are very good on their own but also excellent in cheesecake. They are very like a ginger snap but just taste more home made.

They are adapted from a recipe on gluten-free goddess.com. I'll try to post the exact recipe tomorrow. One of the things I don't like about commercial GF baked goods is the texture of rice flour, so I avoid it. We use a mix of oat flour, tapioca flour and almond flour in our ginger biscuits.

I use any gf digestives and stir in a bit of ground ginger (dried from a jar) once they are broken
Similar taste to ginger biscuits but cheaper
Lovely with lime or lemon topping
