Chocolate fridge cake made with eggs

Looking at old threads asking about choc fridge cake, I thought I’d share “Julia’s recipe” - from the 80s. I made it every week. And it was enjoyed by my family and many guests, visitors and friends. Although some might think “raw eggs? No way!”, I must say it never did any of us any harm! (Well, except our waistlines!)
INGREDIENTS
12oz dark cooking chocolate
6 eggs - separated
Digestive biscuits
8oz butter
8oz castor sugar
METHOD:-
Melt chocolate (over hot, not boiling water). Don’t let any water get into the chocolate.

Whisk egg whites until stiff peaked. Use a little of the castle sugar in the egg whites (as if making meringues).

Mix together softened butter and rest of sugar.
Add cooled melted chocolate. Whisk/beat.
Fold in the beaten egg whites. Gently.

Now layer chocolate mixture alternatively with digestive biscuits.

Leave in fridge overnight. Enjoy!

Sounds great.
What do you do with 6 egg yolks though?

Forgot to say! They get beaten with the sugar. Then beaten again with the melted chocolate. Oops!

I am rubbish at this!
You cream together the butter and rest of sugar. Mix in the egg yolks, mix until creamy (like you would for a cake), then mix in the cooled melted choc. Finally fold in the whisked egg whites.

Thanks - I might try this!

Ooh - I might try that this week.

This fridge cake has raw eggs in too and is amazing!
