That salad you get in a kebab

I would like to eat that sort of shredded lettuce and red cabbage and onion salad that comes in a kebab. How can I make the lettuce taste like that? What do they do to it and how does it last? I'd love to do a load of it and keep it in the fridge for every day but won't it go brown?

I could be wrong but I always thought it was cabbage

BlanketsBanned · 01/04/2022 17:29

You can add the pickled green chillies and use lemon juice

MrsJackRackham · 01/04/2022 17:31

I add oil, mint sauce and lemon juice to cabbage and onion. Leave it overnight to soften.

I am literally eating a kebab with the salad now! I can never get my sales to hit the same!!

Great! This sounds like it would work

It’s a mix of cabbage and lettuce.

BlanketsBanned · 01/04/2022 17:34

I think that’s part of the problem - how do you get the one?
AHungryCaterpillar · 01/04/2022 17:38

Kebab salad always tastes so much better 😋

Nnique · 01/04/2022 17:39

I really fancy a kebab now. Sad

Nnique · 01/04/2022 17:42

But to answer the question it’s usually a mix of lettuce onion and cabbage. Plus the pickled chillies! Ohhh I’m hungry.

Silverclocks · 01/04/2022 17:42

Yes! I know it's cabbage, but what exactly is it dressed with?

justaweeone · 01/04/2022 17:43

I follow this person on Instagram, some amazing recipes

purplesequins · 01/04/2022 17:43

it's just salt, oil, vinegar (or lemon juice). sometimes some caraway seeds or fennel seeds.

shred the cabbage, sprinkle with above and leave for 30 min. then drain & serve.

Nnique · 01/04/2022 17:44

I’m not sure but I’d probably just put a tablespoon or two of the pickling liquid from the chillies, then leave it overnight like pp said to let it soften a bit.

The recipe in the attached photo from the spicery is like a kebab shop salad. It uses their own blend but a mix of half cumin and any of the other spices listed in the ingredients list would do www.thespicery.com/kammun-blend-refill
