Beef Stroganoff but I hate mushrooms

What could I use as a substitute for mushroom as they freak me out?

Also any tips for making it?

Beef strips
Onion
Garlic
Beef stock
Creme Fraiche
Mustard
Mushroom substitute???

Just no mushrooms?

Lardons?

Mushrooms aren’t obligatory. Lardons sound good

Mushrooms are slightly chewy so perhaps something that replicates this.

Butter beans?
Lardons?
Tiny new potatoes or very baby carrots, whole.

My recipe calls for red pepper strips. Cook them with the onions.

Shallots?

Asparagus?

As to tips, I like my beef quite rare, so I cook the beef strips and garlic first, remove from the pan, then start on the onions, peppers; add a little brandy , flame it, then add the beef stock and mustard, crème and throw the beef back in.
Serve with noodles rather than rice sometimes.
And I think we are going to have that now on Sunday …

I make stroganoff with Worcestershire sauce. Is that not in the recipe?! I've no idea why I use it, mind you. It doesn't taste like stroganoff without it though 🤷🏻
