Banana Loaf

Ingredients
75 g soft butter
110 g caster sugar
1 large egg, beaten
225 g plain flour
2 level tsp baking powder
2 medium bananas, peeled
grated rind 1 orange (I have used a couple of drops of orange extract instead)
grated rind 1 lemon
50 g walnuts, chopped ( you can use brazil nuts)

Method

Pre-heat oven to gas mark 4, 350 ged F, 180 deg C

Grease a loaf tin, also line the base (I use a 2 lb tin)

Place butter, sugar, beaten egg in mixing bowl, sift in flour and baking powder. Whisk together all ingredients - don't worry if it looks too dry at this stage.

Add mashed bananas, orange and lemon rinds and walnuts. Mix thoroughly and add to prepared tin.

Bake in the centre of the oven for 50-55 mins, until it is golden, well risen and springs back. Leave to cool for 10 mins then remove from tin.

Flapjacks

Preheat oven 180C, in a saucepan melt some butter:

8oz butter, melted (most of one pack)

stir in

8oz porridge oats (2 cups)
5oz granulated sugar (about 3/4 cup)
1 tablespoon demera sugar (optional)

You can also add any of the following:

2 tablespoons flaked almonds or chopped nuts
2 tablespoons chocolate chips
2 tablespoons sesame seeds
2 tablespoons dried fruit

Bake at about 180C for about 15 mins, this makes two trays about 12"x 6", about 24 squares. While they are still warm, cut into squares.

Other ideas instead of chocolate
chopped dates
chopped dried apricots
chopped dried bananas
glace cherries ( natutal ones)

This is FrannyandZooey's sugar free banana loaf recipe. Very simple and delicious.

4oz self raising wholemeal flour (I have used white as well)
1/2 tsp mixed spice
2oz butter
3oz raisins
8oz banana
1 egg, beaten

Preheat oven to gas4. Mix spice into flour, rub in the butter and stir in raisins. In a separate bowl mash the banana and egg together then stir into the flour mixture.

Put into a well greased tin (small loaf or round), turn the oven down to gas 3 and cook on middle shelf for about an hour.

Optional - cover with mixture of Phillidelphia (2 parts) and jam (1 part) blended together.
