I'm hosting family for DS birthday for lunch. I want to put a good spread together to make sure there's something for everyone, including kids. I have a baby too so would ideally like to prepare ahead and freeze some (most!) of it.
So far on the list:
- Salmon and broccoli quiche (already made and frozen)
- Vegetarian sausage rolls (with walnut and feta). I froze a couple last time I made them to see if they defrost well. Fingers crossed
- Cheese, ham and spinach waffles (will freeze and reheat in the oven)
- Vegetable sticks (cucumber, celery, red pepper) and dips (houmous, sour cream & chive)
- crisps
- desserts will be one chocolate cake and one apple tart.
What else could I include? There will be 4 adults and 2 children, plus a toddler. I was going to do a pork and beef meatloaf with bacon and maple glaze but DH isn't convinced.
I feel like everything on the list so far is quite dry/pastry-heavy. Should I have some sort of "wet" salad? Pasta salad? Rice salad? What about a charcuterie platter and olive as well as a way to bulk it out with zero effort required?
Would love some ideas! Thank you!
