Leftover roast beef / quick and easy

We have some left over beef joint (cooked) from yesterday.

Any recipes for a quick dinner with the leftovers?

Ideally don't want to go shopping and if it's suitable to feed a 9 month old that's a bonus but not at all a necessity!

Can only think of stew or beef pie or curry...

Thinly slice the beef and warm through in some gravy with onions then stuff into a baguette 🥖 😋

Cottage pie, dice the meat, put in a dish, add chopped leftover vegetables, or frozen peas etc, add left over gravy or stock from stock cube. Top with mashed potato (frozen works well) add some grated cheese if liked.
Cook till hot & golden, ideal for a 9 month old.
Or
Make an Asian style broth with wilted leaves, sweetcorn, chopped onions and peppers, left over carrot peas or broccoli all in a stock. Add matchstick pieces of beef towards the end of cooking. Use sweet chilli sauce, soy sauce, hoi-sin sauce etc for flavouring.

We've had sandwiches for lunch but want a hot meal.

I thought about chilli but we had it on Saturday with minced beef 🤔

How would you do the egg fried rice? Would the beef go hard for that or the fajitas?

Pytt i panne - chop beef and fry with a chopped onion and left over cooked potatoes in loads of butter and plenty of seasoning. Serve with fried egg and beetroot.

This is my lazy leftovers egg fried rice. Serves one absolute glutton (cough) or 2 or 3 as a main course or side dish..

Crack 2 eggs I n a mug, mix but don’t whisk. Then cook in a hot wok till it is almost but not quite set. (Like undercooked omelette/scrambled egg cross)

Set aside the egg when done

Heat up a pack of microwave rice, and sort some veg (I like to ping a steamfresh pouch but anything you fancy will work fine, icuding browning off onions etc)

Chuck the veg and rice in the wok. At this stage you can shred the beef and sling in unless you want to do something fancy with it*

Season with a shedload of soy sauce, and chilli flakes if you fancy..then chuck the egg in, and cook for Just long enough to set the egg properly.

Turn out onto plates and scoff.

  • if you are feeling motivated then stir fry the cooked beef separately in a frying pan with garlic, chilli and 5 spice. Or black bean sauce or something. Then sling on top of the rice when you dish up.

We had hot beef sandwiches and chips with Sunday's leftovers. Delicous but not very baby friendly 😂

The chilli on Monday was really good

There might be some leftover meat in the fridge still(!)

I'm thinking of making a chow mein or sir fry type dish or egg fried rice tonight (I love Chinese takeaway inspired recipes on uptime)

But feel like it's borderline whether I should keep and cook the beef? Obviously will throw away after today if there is any left...
