Einkorn sourdough starter

Has anyone made this? I want to bake Einkorn wholemeal bread from a sourdough starter, but I am confused.
The instructions say 'take a bit of the starter and feed it daily with 30g water and 48 g flour.
But if I'm throwing most of the starter away each day, how will I ever get enough starter to make a loaf of bread?
Also, it's turning out expensive. If I give the starter 48 g of flour every day, that's nearly a packet of flour in 10 days, with most of it chucked away.
Am I wasting my time and money? Any bakers out there, I'd love to hear if you have made a starter and it's turned out ok.

You don’t need to use that much - 10g per day is fine whilst you’re building it up then, just before you want to bake, feed it a larger amount to get enough for your loaf - check out Bake with Jack, he explains it all really well
