Salads to take to work

Looking for some recipes for salads which I can male ahead and take to work with me. Preferably no separate dressing etc.

Just very bored of sandwiches and my new job doesn't have anywhere nearby where I can buy lunch

I think any salad travels well, the trick is to make sure it's substantial enough. Also, separate dressing isn't hard - just a small bottle with a screw cap (old acohol minis work well!)

Tuna pasta salad (use extra dressing as the pasta absorbs it).
Couscous with roasted veg and feta/goats cheese
Chicken and avocado - lots of greens, peppers and cucumber for crunch, chicken and avocado to fill up on. Add pine nuts or feta cheese if you like.

Goats cheese, lentil and beetroot.

Having said all that - these are all salads I do for dinner more often than lunch. Too much faff to make as lunch usually. If I was wanting for lunch I'd probably do for dinner and make extra to save a portion for lunch.

Easy one:
A packet of Merchant Gourmet quinoa
some diced red pepper, red onion and beetroot
lemon juice
drop of olive oil
feta
I mix this up and then divvy it into a couple of tubs and add rocket leaves on the morning of the day I'm eating the tub.

A cheaty one I do is to buy the M&S edamame salad plus a pot of plain edamame and a bag of sugar snaps (slice the later; I like to ponce around and do them on the diagonal). Mix it all up with the M&S dressing and a squeeze of lime juice and divvy it into tubs.
