Have you ever replaced the chocolate in a dessert recipe (brownie, cake etc) with cocoa powder? What conversion rules did you use and how did it turn out in terms of texture differences etc?

I would think you would need some fat in there too.
Brownies, cakes etc you can usually find a recipie with cocoa in, so maybe go for a recipie when the testing has already been done?

quite a tricky swap, as cocoa is so very dry. I agree - look for a different recipe that uses cocoa.

I have, I mixed the cocoa powder with water to give a consistency a bit like melted chocolate. Though I agree with the others that a cocoa containing recipe might be a good idea.

This is a really good brownie recipe with cocoa - I make it all the time. Sometimes I swap out the coconut for walnuts, and sometimes leave them out but replace the weight with the flour. Only problem is that it requires a shit load of sugar, and half a pound of butter, so it’s not exactly healthy…

I recently made a brownies recipe that uses cocoa powder instead of chocolate - it was from an old M&S cookbook that my mum had, and I remember making them back then (circa 1984) and thinking they were brilliant.

The top crackled impressively as I remembered, but other than that, they were revolting. Just tasted of sugar, not chocolatey or fudgey at all.

I make these Alice Medrichs brownies after seeing the recipe recommended on mumsnet, and they are really good, I think they are better than ones made with chocolate, and they work out cheaper too.
