Cooking veggie for a diabetic and a hungry teen

We are a veggie family with diverse needs ( we eat eggs and DS will eat meat outside the home occ) DH is Type 2 diabetic and needs to be low or no carb. DS is a teen who needs carbs. I myself would like to be low carb because diabetes runs in the family. Did I mention we are Asian and prefer spicy, flavourful food if we can get it? :(

With all these requirements, am really running out of ideas. So many Asian dishes such as curries and daals really can't be eaten without rice or rotis. So I have to cook separately for everybody. DH does salad for lunch but he works much longer hours so usually can't do dinner. Is anyone else in this situation? Today dinner was stir fry veggies with egg fried rice on the side so that DH could eat it wout rice and DS and I could eat it with. Maybe I need to buy a special diabetic cookbook?

For context, DHs diabetes was under control until recently so he ate a bit of carbs. But it's got worse over the pandemic. He does not eat sugar at all or drink.

Has the Gp put him on a low carb diet? It works for some but if on certain medications or insulin can be dangerous.
Have a look at diabetes Uk. Carbs and Cals book. Lots of ideas for recipes on diabetes uk. Roti with wholemeal flour is better also. Everything in moderation. More walking is good.

Yes, his GP has suggested low carb. We don't have a car and are in central London so we all walk everywhere. I just discovered the low carb bootcamp on this site. Didn't know it existed. I can apparently make a lot of things out of aubergines:)
