Half a bottle of prosecco recipes

I've got half a bottle of prosecco from a party at the weekend. I'm not going to try tasting it but my guess is its now very flat and a bit vinegary (it wasn't that nice to begin with).

I hate throwing things away so was wondering if anyone has an good recipes for using it up. The criteria are:

  1. vegetarian
  2. child friendly
  3. simple

I'm thinking maybe a pudding/cake but open to all suggestions.

If it’s flat and vinegary it’s going to ruin anything you put it in. Just Chuck it away.

If it's from the weekend then it's probably not vinegary yet. You could use it in a risotto (as long as not too sweet), or in place of red wine in any stew or sauce. If it is a bit sweet could work in a big rice pudding?

I freeze leftover wine in small plastic tubs then I have some ready for the next risotto or whatever else needs a bit of white wine in it - bolognese or whatever.

If it's vinegary, just use it in place of vinegar
