ok, new years resolution is to cook and freeze more, give me your bestest ever soup recipes please.

Ive thrown something together tonight but im not one of these lucky cookers whos thrown together stuff comes out lovely.
do you have any simple, easy soup recipes that i can batch make then freeze please.

I usually do leek and potato (very easy) and did cauliflower and cheese soup over Christmas. Planning to try pea and ham soon [adventurous] and also chicken with leftover bones/meat.

Must get dd uot of the bath.

jersualem artichoke and carrot soup

1 lb of carrots - peeled and chopped
about 6 - 9 jerusalem artichokes - peeled and chopped
onion - large, peeled and chopped
couple of sticks of celery (optional)
garlic - to tase
chilli - to taste
salt and pepper
stock (veggie or chicken)

throw everything in a pan, and fry in some olive oil until golden and getting a bit soft

cover with stock, bring to the boil and then simmer for 35/45 mins

add a bayleaf

remove from heat and take out bayleaf - whizz up and it is yum, and a great orangey colour!

freezes very well

onions, garlic, ginger, chilli, butternut squash and grated carrot...gently fry together for half an hour or so. Add stock. Whizz up. Add S&P.

Is lovely. Needs loads of ginger though.

Cheats soup

veggieBag of frozen casserole mix/stew pack

Gently cook until soft adding stock cubes herbs & seasoning (btw stuffing mix woorks well)

then liquidise

Tomato
Fry frozen onions & peppers & mushrooms in olive oil & herbs (I use garlic & coriander - which come from little jars in the fridge)
Add Tin of chopped tomatoes

Liquidise & add milk to required creaminess (I'm eating it now with no milk added)

I do cook properly as well

easiest ever

head of brocoli
one onion
2 potatoes

saute onion, add sliced potato, steam,10 mins, add brocoli, steam 3 mins then add stock about 1 litre, s & P, cook til potato done, not long and liquidise.

brocoli - super food!

RS lol, I never used to like jerusalem artichokes but this soup is so delicious I take the farting for granted

i go through tonnes of frozen peppers/onions/mushrooms in just about everything (stir fry/casseroles/soups/stews)

& I love the garlic & herbs & coriander in jars in the fridge

These are my best ever ingredients
