Muffins mine are falling over and failing badly Help please!!!

ok I know there are a few people out there who are mumsnet wide known for their mufin making skills I desperately need help as my muffins are more like failed fairy cakes, I have tried changing the recipe I have to make lemon and poppyseed and raspberry and white chocolate so here are my questions;

can I use self raising flour or does it have to be plain?

I have a silicon muffin tray how much mixture do I put in? my muffins tend to overflow then when I try to get them out the tops come off.

this is the receipe I have;
10oz (280g) plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
½ teaspoon salt
3 large well-ripened bananas (about 1lb / 450g in total)
4oz granulated sugar
1 egg, beaten
2-3 fl oz (60 ? 90 ml) milk
3 fl oz (90ml) vegetable oil
½ teaspoon vanilla essence

If I wanted to make lemon and poppyseed muffins do I change the fluid added? or if I make apple and cinnamon.

Any help would really be appreciated

Firstly because you are using raising agents it does need to be plain flour.

Secondly, I bake muffins regularly and am not a fan of the silicon moulds to me you just dont get the cruncy muffin tops that I love. I use paper muffin liners in a metal tray.

they need to be cooked at 190- 200 for about 20 -25 mins.

For lemon poppyseed - add 1 tsp grated mlemon to wet ingredients and 2 tablespoons of seeds to dry.

For apple cinnamon - reduce to 90z flour, 3 tsp baking powder, 1.5 tsp mixed spice, 4oz sugar, 1/2 tsp salt, a beaten egg, 150ml milk, 90ml corn oil, 6oz chopped apple

thank you murphy I will try that I only have an ordinary cake tin I guess I can use the with the paper cases
